Opened by their Royal Highnesses, Prince Edward and Sophie Countess of Wessex in 2009, and named for Dame Sibyl Hathaway, the current Seigneur’s Great Grandmother, the 16th century building that houses this culinary delight has seen many changes and adaptations over the centuries.

Originally the main house on La Rade tenement, Seigneur WT Collings converted it into a carriage house with wonderful brick pillars during the Victorian era, before the house was used as a milking parlour and stable until dairy operations ceased on the farm in the late 20th Century.

Lengthy sympathetic renovations were undertaken to restore and retain the historic building’s original features, and the establishment has gone from strength-to-strength since its inauguration by their Royal Highnesses.

Chef Andrew Tortice, formerly of La Moinerie and Beau Sejour, is the classically trained master behind Hathaway’s renowned food. Originally schooled in the French tradition, he describes his menu as being modern and eclectic with French, Italian and English influences, along with a hint of the oriental flavours he loves.
Passionate about using local produce as much as possible. Andy serves teas, coffees and cream teas, along with light lunches and fish and chips during the day, before offering a full restaurant menu in the evenings.​
